Baby Kale & Carrot Salad

Yes, another salad, but oh what a salad. It goes together in a snap and the unusual Ginger-Lime Dressing is so good you’ll want to eat it with a spoon. And talk about cutting the carbs and finding more flavor — This is about as low carb as you’ll find and packed with flavor.

Baby Kale Salad
Ingredients:
6 oz. Baby Kale or Baby Spinach
1/4 Cup Shredded Carrots
1/2 Cup Sliced Cucumbers

Toss together in a large bowl and set aside while you make the dressing.

Serves 6 – Approximately 3g net carbs per serving

Ginger-Lime Dressing
Ingredients:
2 Tbsp Pickled Ginger
2 Tbsp Chopped Red Onion
Juice of 2 Limes (2-3 Tbsp)
2 tsp Splenda Granulated Sweetener
2-3 Tbsp Chopped Fresh Cilantro, Thai Basil or other herb
1/2 tsp Kosher Salt
1/2 Cup Vegetable Oil

Toss all the ingredients into a blender or immersion blender and blend until smooth.

Yields 1 Cup Dressing.
Serving size – 2 Tbsp – Approximately 1g net carbs per serving
